Xingjiang Province

My geographical knowledge about Xinjiang Province of China is that it is home of the Taklamakan and Gobi Deserts and of the Islamic Uighur Islamic people.

And to my amazement I find this:

Besides this I know it is from the mountains that glacial waters flow into the basin which in effect is Xinjiang Province. And in ancient time the ancestors of present Uighur people built an immense subterranean irrigation system for which their grew their famed grapes. And they still grow these grapes today.

It is shall we say:
QUITE SOME PLACE.

Its capital city is Xian. It was once the capital of China.

And Xian, in ancient times was also the starting point of the original silk road.

I read somewhere that 3000 years ago, in Xian, there was very famous restaurant for its signature chicken dish. My read of it is that this restaurant is still operation today. If this is so, it is far older than Maxims in Paris.
